SPRINGFIELD DEER FARM

Set on the Limestone slopes of the Western Tiers, overlooking Mole Creek township, presented on a Walk In Walk Out (WIWO) basis is Springfield Deer Farm, offered as a successful and profitable business as a going concern. The property has its own abattoirs and processing facilities, certified commercial kitchen and thriving client list. The homestead which was established in approximately1890 is set on 125 acres comprised of two titles that could easily be imagined to be part of the slopes of Scotland or the foothills of many regions of Europe that are the natural habitat of deer, this is an ideal environment for deer to flourish. The farm runs on average approximately 400 head of deer.
As indicated above this is an ideal environment for running of deer. The slopes and aspect of the property provide perfect conditions for the development of the muscle tone, so important for the texture and flavour of the meat, as is tho soils set over the famous limestone slopes and caverns of the area. The rocky outcrops, and the limestone itself are also a natural and essential component in maintaining healthy hoofs as they migrate around their allocated runs, while the bracken cover on the rocky slopes provides shelter and warmth for the developing fawns during their early development. The lower slopes and flats provide for lush pasture for “finishing off” the stock in preparation for market, and for cutting for hay to supplement the stock during winter.
The produce of the farm and the destination itself are widely known and highly respected, having been featured on the travel show “Getaway”, and frequently featured in national magazines and rural print media, having recently been included in the Weekly Times monthly “Farm” supplementary magazine as a feature article. The only portion of the business that is now outsourced is the production of the Springfield Venison Pies, now undertaken by a local bakery on behalf of the vendors.
Living is idyllic and comfortable in the one hundred plus year old homestead, featuring three bedrooms, spacious and bright domestic kitchen, dining and lounge with access to the now enclosed veranda from the lounge and each bedroom. The house also has the commercial kitchen where the smallgoods of the business are processed. From the veranda you then have an expansive deck at the front of the house to enjoy the remainder of the day in the privacy of the setting or with friends and guests.
The Guest B & B Cottage has a cosy décor, with cathedral ceilings and comfortable furnishings. It is a popular destination not just with farm visitors, but also as a base for people wishing to explore the many other tourist destinations of the area and the culinary delights it has to offer. The scenery and vantage point from both within the boundaries of the farm as well as the many attractions of the Western Tiers that form the backdrop are nothing short of awe-inspiring.
